Ingredients:
           
Fermentable 1:
6 lbs Maris Otter Malt
Fermentable 2:
2 lbs German Pilsner Malt
Fermentable 3:
2 lbs malted wheat
Fermentable 4:
1 lb crystal malt 10°L
Fermentable 5:
4 lbs extra light dry extract
Fermentable 6:
2 lbs palm sugar

Flavoring 1:
1 oz crystalized ginger

Hops 1:
4.5 oz East Kent Goldings

at end of boil

Yeast:
2 vials White Labs WLP002 English Ale Yeast

Process:
  • boiled 10 quarts water
  • added to grains (target=150°F)
  • mash total 1.5 hours
  • sparge with 5 gallons at 170°F
  • collected runoff and added DME, palm sugar and ginger
  • added water to make 7 gallons (to provide some headspace in 40qt pot)
  • boiled 1 hour with hop additions as indicated above
  • Irish moss added at 10 minutes before end of boil
  • water added to make 10 gallons
  • chilled through counterflow chiller
  • fun into two 5-gallon glass fermenters
  • yeast pitched
  • first fermenter kegged at 7 days
  • second fermenter bottled at 8 days (18 July)
Notes:

This recipe is partial mash only because I do not have the capacity to mash sufficient grain for 10 gallons (I really need to get a 10 gallon beverage cooler).

  • this beer is a little hoppier than I would have liked - very good, but I was shooting for something with a broad appeal among folks whose taste runs to something less flavorful.  Still, it seems a very nice beer.
