ingredients:
- 1.75 liter cheap vodka
- 3 tbs dry wormwood, crumbled
- seeds from 16 pods cardomom
- 32 coriander seeds
- 3 tbs anise seed
- 3 tbs chopped angelica root
- sugar syrup
process:
- Combine vodka and wormwood and let steep for 48 hours
- Strain solids from mixture
- Crush herbs and spices in mortar
- Add crushed herbs & spices to liquid
- Seal tightly and keep in a dark place for one week
- Strain solids from liquid
- Sweeten to taste by adding sugar syrup
True absinthe requires a couple of distillations. This is illegal, but more important, it is a great deal of work. The infusion is adequate. To make it more authentic, you should start with a much more potent base. Typical vodka is 80 proof, but absinthe should be 130 proof or more. You could use Everclear or a 160 proof vodka such as Devil's Spring as a starter. By the time you mess around with it and add the sugar syrup, you should be getting down to the appropriate alcohol levels. Unfortunately, both these products are difficult to find in my neck of the woods.
