Ingredients:
           
Fermentable 1:
9 lbs Briess Pale Ale Malt
Fermentable 2:
1 lb Munich Malt
Fermentable 3:
1 lb Crystal Malt 40L
Fermentable 4:
1 lb Toasted Pale Malt

Hops 1:
1 oz Northern Brewer
Alpha:
7.5%
Time:
30 Minutes
Hops 2:
1 oz Yakima Goldings
Alpha:
5.5%
Time:
10 Minutes
Hops 3:
1 oz Crystal
Alpha:
4.7%
Time:
after boil

Yeast:
White WLP 'Dry English Ale' liquid culture

Process:
  • Single step infusion mash: with 3 gallons water - 60 minutes at 154F
  • Sparge with 3 gallons boiling water
  • Collect run-off in brew pot and add water to make 6 gallons
  • Boil wort 60 minutes
  • Make hop additions according to schedule above
  • Cool (counterflow cooler) to 70F
  • Pitch yeast in plastic fermenter
Notes:

040307 - racked - SG=1.012 - will bottle next week
040404 - it took longer to get to bottling than I thought it would and the gravity dropped still farther which makes me glad I waited.  Highly hopped with a definite toasted malt flavor hanging in the background.  I think I will really enjoy this one.
